BBQ Beef and Biscuit

Casserole


16.3 oz can of 8-count flaky biscuits
1 lb ground beef
1 yellow onion, small diced
1 c BBQ sauce
14.5 oz can Rotel diced tomatoes, drained
1-1/2 c shredded Colby Jack cheese
Preheat oven to 350 degrees. Grease a 9x13 casserole dish. Place biscuits along the bottom, flattening them out so they cover the entire dish. Bake the biscuits until they are slightly browned, about 10 minutes. Meanwhile, cook the beef and onion in a large saute pan over medium-high heat. Once beef is browned through, drain excess grease. Add BBQ sauce and tomatoes; stir to combine. Pour beef mix over partially baked biscuits and top with Colby Jack cheese. Bake 10-15 minutes, until cheese is melted and mix is bubbly.
